New Sushi Restaurant Opening in Ballantyne Town Center A new sushi and sake bar is opening soon in Ballantyne. Chef Robin Anthony will be debuting Prime Fish, a raw sushi and sake bar, on May 22 at the Ballantyne Town Center. The new establishment will offer a variety of sushi and sashimi options. Anthony’s goal for the restaurant is to take sushi to the next level in Charlotte. Aside from traditional Edomae sushi, Prime Fish will also serve tapas with sake pairings, high-end sushi, and sashimi in an intimate setting. The tapas will include: Black truffle salmon with a pairing of Bride Fox sake. Takoyaki paired with cloud nine sake. Crispy calamari paired with 1000 Dreams sake. Hand-rolled sushi options will include California, shrimp tempura, Philly, and avocado. There are also nigiri and sashimi options, such as Bluefin Tuna, Tamagoyaki, octopus, scallop, and more. Perhaps the most fun option on the menu are the Spongebob-inspired specialty rolls like the "Squidward" (crispy calamari, avocado, spicy kani, sweet chili aioli) and "Patrick" (crispy kani, avocado, spicy tuna, eel sauce, jalapeno, tobiko) rolls. Anthony believes that his passion for sushi and sake, along with his loyal Charlotte customer base will make Prime Fish a successful venture. Anthony has played an integral role in raising the bar for sushi in the Queen City over the past four years. He is also the first sushi chef to hold a Bluefin Tuna Show in Charlotte.
